Watermelon Checkerboard 

Ingredients:

Watermelon

Olives

Feta

Medley Cherry Tomatoes

Dressing:

1 tbsp honey

Finely sliced mint

Juice of 1 lime

Salt

METHOD:

Try your best to cut all items to roughly the same size. Use a small square or round cookie cutter for the watermelon. Either use the cookie cutter or just slice the feta to size. Halve the medley cherry tomatoes.

Then simply get started. Place the watermelon down first as it’s the hero of the plate, then fill in the spaces with alternating fetta, tomatoes and olives.

Once you’re happy with it, mix the honey, mint and lime juice together and splash over the plate. Finish with a few extra mint leaves and the zest of a lime.
