Warm Potato Salad 

Ingredients:

3 peeled, diced and boiled potatoes

Half a red onion sliced

Handful of chopped parsley & dill

2 Handfuls of rocket

A generous drizzle of olive oil

Juice of half a lemon

Eggs (boiled for exactly 7 minutes)

Salt & pepper

1 tin of tuna

METHOD:

Boil the spuds, strain then and throw them in a bowl - while still warm, add the sliced red onion, salt, pepper, olive oil and lemon juice. Give a good stir to let the flavours get friendly with eachother.

Then mix in a few handfuls of rocket, 1 tin of tuna and serve up in a big bowl. Add some jammy eggs for the perfect finishing touch.
