Simple Beetroot Soup

Ingredients:

2 large beetroots, peeled and grated

1 onion, chopped

2 carrots, diced

2 celery sticks, diced

4 cups water

2 tsp vegetable stock powder

1 potato, diced

¼ cabbage, shredded

1 tbsp olive oil

Salt & pepper, to taste

Fresh dill, to garnish

Dollop of sour cream

Method:

Heat olive oil in a pot over medium heat. Sauté onion, carrots and celery until soft. Add cabbage, grated beetroot and diced potato, cook for 5 minutes.

Pour in water and stir in vegetable stock powder. Bring to a boil, then reduce heat and simmer for 30-40 minutes.

Season with salt and pepper and serve hot, garnished with fresh dill and a dollop of sour cream.
