Mango, Cucumber & Chilli Salsa on Burrata

Ingredients:

1 Burrata ⁠

1 diced KP mango ⁠

1 diced Lebanese cucumber⁠

1 finely diced red chilli (seeds removed to make it less spicy)⁠

Juice and zest of half a lime ⁠

Drizzle of olive oil ⁠

Sprinkle of salt⁠

Method:

Place the burrata in the centre of a serving plate, cut open and spread around the plate to form a bed for the salsa. ⁠

In a small bowl, combine the mango, cucumber, chilli, lime juice and zest. Toss gently with a drizzle of olive oil and a sprinkle of salt.⁠

Spoon the mixture around and over the burrata.⁠

Serve immediately with crusty bread or crackers for scooping.
