Mango, Cucumber & Chilli Salsa on Burrata
Ingredients:
1 Burrata
1 diced KP mango
1 diced Lebanese cucumber
1 finely diced red chilli (seeds removed to make it less spicy)
Juice and zest of half a lime
Drizzle of olive oil
Sprinkle of salt
Method:
Place the burrata in the centre of a serving plate, cut open and spread around the plate to form a bed for the salsa.
In a small bowl, combine the mango, cucumber, chilli, lime juice and zest. Toss gently with a drizzle of olive oil and a sprinkle of salt.
Spoon the mixture around and over the burrata.
Serve immediately with crusty bread or crackers for scooping.
