Poppyseed & Citrus Crepes
Ingredients:
Crepe batter:
1 & 3/4 cups of plain flour
3 eggs
1 tsp vanilla extract
2 cups of milk
2tbsp melted butter
Zest of a Meyer lemon or orange
1 tbsp poppy seeds
Filling:
Ricotta with Meyer lemon zest and juice
Marmalade
Method:
Mix all of the crepe ingredients together and cook one by one in a frying pan. Pour the batter into the centre of the frying pan and gently move the pan around to spread the batter thinly. Cook for around 2 minutes and flip to finish the other side.
Fill with ricotta and marmalade then top with some extra marmalade and fresh blueberries.
We suggest filling them and topping them with whatever you please! This is definitely a versatile recipe that can be mixed and matched with what you have on-hand.
