Mini Orange & Poppyseed Protein Pancakes 

Ingredients:

¾ cup plain (all-purpose) flour

¾ cup Pure: FABA Flour

2½ tsp baking powder

½ tsp salt

2 tbsp sugar

Zest of 1 orange

2 tbsp poppyseeds

1¼ cups milk (any kind)

1 egg

3 tbsp butter, melted

2 tsp vanilla extract

METHOD:

Yoghurt, maple syrup and fresh fruit

In a large bowl, whisk together the plain flour, Pure: FABA Flour, baking powder, salt and sugar.

Stir through the orange zest and poppy seeds until evenly distributed.

In a separate bowl, whisk the milk, egg, melted butter and vanilla.

Add the wet ingredients to the dry and gently mix until just combined. The batter should be thick but pourable.

Heat a non-stick frying pan or griddle over medium heat and lightly grease.

Spoon teaspoons of batter onto the pan and cook for 1–2 minutes, until bubbles appear on the surface. Flip and cook for another 1 minute, until golden and cooked through.

Repeat with remaining batter. Serve warm as a pancake bowl or cool and pack for the lunchbox
